- 2 cups chicken stock
- 12 oz. hard cider
- 1 cup wild rice
- 1/2 onion (medium large, chopped)
- 4 garlic cloves (minced)
- 1 cup water
- 1 salt (hefty pinch of)
- 2 Tbsp. ghee
- 1 Tbsp. butter
- 1 Tbsp. mustard seeds (dark)
- 1 1/2 Tbsp. fresh thyme leaves (or 1½ t dried chopped)
- 1 1/2 onions (medium large, chopped)
- 8 cloves garlic (minced)
- 2 Tbsp. minced ginger
- sea salt
- 1 lb. crimini mushrooms (sliced)
- 4 apples (small, chopped, I peeled them because they were older, but if fresh I don’t bother peeling)
- 12 oz. fresh cranberries
- 4 Tbsp. honey (depending on your taste and depending on how sweet your apples are, start with lesser amount)
- 1 1/2 tsp. ground coriander
