I love these. Must make again. But now I'm trying to piece together what I modified.
-1/4 cup sugar (not 1/2) because of sugar in my cranberries.
-2 tablespoons of clarified butter and 2 tablespoons spreadable butter with olive oil.
-2 tablespoons fresh orange juice (not 4 Tablespoon) and only 2 tablespoons of milk, because...I only had canned cranberries. So, I didn't want to make the batter too wet.
I also added 1/2 teaspoon of salt. I did not top muffins with sugar. Didn't need it.
All other ingredients worked out well. Moist and delicious. Thank you.

Used half 2% milk and half nut milk (about 1 c total as these turned out too dry and crumbly the first time using 1/2 c.), half sugar and half monk fruit sugar. Whisk liquids, mix dry goods, stir all together with wooden spoon so as not to over mix. Skipped the sugar topping and just served w butter and a drizzle of honey. 400 degrees, 17 min. Use my ceramic muffin tin greased lightly with butter/Earth Balance.
