love this cake...i have made it a couple of times and once sprinkled coarse sugar on top to add to the crisp top

WAY too sweet. I couldn’t even eat it. Others liked it but also couldn’t eat very much. I thought the cranberries would make it tart enough to offset the sweet but not true for me and my family. I’m astonished on reviewer would add sugar!!

I only had 2 eggs but it was easy to adjust the recipe by changing the serving size on the website.
- 2 eggs
- 1 cup sugar
- Half cup butter, softened
- Half teaspoon vanilla
- 1.25 cups all-purpose flour
- About 7-8 oz fresh cranberries
Also used an 8x8 pan and same cooking time.

It’s a good recipe. I’ve used craisins rather than fresh or frozen cranberries. It still comes out delicious. This cake is a bit more flaky at the crust. It’s the best when it comes right out of the oven.

I made this with frozen forest fruits and used less sugar. The final product was great, I'll definitely do it again.

it is very easy to make. the tart n sweet flavor is yummy. i added orange zest, all spice and a little ginger as extra spice. its a lovely desert, would probably go good with ice cream.

Fantastic. This will be my third year bringing this to our family dinner on Christmas Day. I also am making small tins of it for friends and family.
My husband got me a stand mixer and I’ve got to say, it’s much easier to make with the stand mixer than it was the first time I made it using a hand mixer

I followed the directions to a T and I didn’t get the lovely crust at the top.. instead all of the cranberries floated to the top while it was baking so they weren’t mixed throughout the batter anymore but it still tasted good

Made it tonight and followed the recipe exactly. This is an amazing cake! Tart, sweet, moist, with a buttery and crispy top layer. I’m saddened that I only had one bag of cranberries and only 3 pieces of cake left! 😩

This will now be made every Christmas. Everybody loved it. Wonderful with coffee, tea, cocoa, or after dinner liqueurs. Outstanding.

Excellent!!! Made it 3 times and it is a crowd pleaser.... so easy even a nonbaker can do it!! Very moist and delicious.

This cake was so delicious! And really easy to make. I did it in loaf pans and muffin cups so I had to adjust baking time slightly but it turned out perfectly!

Just pulled it out of the oven 10 minutes ago. It's delicious and melts in my mouth. So good, I just might forget making cranberry bread every Christmas and make this instead!

I made this cake this past week and WOW - did we like it. I also packed some to send to friends. I wonder if i can use frozen cranberries if i can't find cranberries at other times of the year. I added chopped pecans. I noticed someone below said they thought it was a bit sweet. Ours turned our more tart but i figure that was because of the cranberries.. I will definitely be making this again... It is a KEEPER for sure.

Oh my gosh! The yummiest and easiest cake ever! I was a bit nervous as I’ve never used fresh cranberries before. I just want to keep making it over and over and over again!

Really really good. This is the third time making these. As soon as they are gone I get comment “there are more berries in the fridge”.

Friends and family love it!! So easy to make. I do put more cranberries then it call for.
