- 3 Tbsp. green onions (or chives, finely chopped)
- 1 egg (lightly beaten)
- 1 tsp. Dijon mustard

- 1 Tbsp. water
- 3 lemons (juiced)
- 2 cups beef broth (hot, or chicken broth or stock)
