Description
Rich and creamy oyster soup has long been a traditional meal in the Lowcountry. For her delicate version, Amethyst Ganaway adds crab and a sprinkle of benne, an especially sweet and nutty type of sesame seed that is native to West Africa and was brought to the Carolina Sea Islands by enslaved peoples. It’s available online from Anson Mills. For a bigger pop of flavor, feel free to finely grind extra benne seeds and stir them into the soup. The recipe is a Yummly original created by Amethyst Ganaway.
Ingredients
- 2 tsp. vegetable oil (neutral-flavored)
- 1 stalk celery (small, very finely diced, about 2 tablespoons)
- 2 Tbsp. flour
- 8 oz. oysters (preferably small, jarred or canned, with their liquor; or 15-20 fresh oysters, shucked, with about 1/3 cup of their liquor)
- 2 3/4 cups milk
- 1 1/4 cups heavy cream
- 2 cups crabmeat (cooked, fresh or canned, about 3/4 pound)
- 1/4 tsp. ground white pepper
- salt (to taste)
- 1 tsp. benne seeds (optional, for serving)
- finely chopped chives
Directions
- Set a heavy-bottomed medium saucepan over medium heat. Add oil and saute celery until translucent, about 3 minutes. Add flour and stir until oil is absorbed. Add in oyster liquor (set oysters aside) and whisk until incorporated.
- Add milk and heavy cream and bring to a simmer, stirring occasionally and watching to ensure it doesn't come to a boil. Simmer until the soup has thickened slightly, 5-10 minutes. Then reduce heat to medium-low and add reserved oysters and the crab meat. Let cook, stirring very gently, until the oysters just start to curl at the edges, 3-5 minutes. Remove from heat, add white pepper, and salt to taste.
- Serve soup with toasted benne seeds and chives.
