- 2 Tbsp. olive oil
- 1 red bell pepper (diced)
- 2 stalks celery (diced)
- 1 onion (medium, diced)
- 1 clove garlic
- 1 lb. lump crab meat
- 1/4 cup parsley (fresh minced)
- béchamel (see below)
- 3 oz. gruyère cheese (for topping)
- chives (Fresh minced, for garnish, optional)
- 4 Tbsp. unsalted butter
- 5 Tbsp. all-purpose flour
- 3 cups milk low-fat (or fat-free is fine)
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 3 oz. gruyère cheese (optional – if you add this to the sauce it becomes a Mornay sauce instead of Béchamel)
- butter (to grease the pan)
