So I modified this a bit I used no onion and no tomato. Instead I added jalapeños, canned green chiles, green and red pepper to the corn and black beans. I used all seasonings but I added onion powder, more salt and pepper and Goya sazon seasoning. Also did not have red wine vinegar so I substituted for apple. Turned out great!

Delicious, although I would use a tad less cayenne as it was a bit too spicy for even me (I love spice!). I also added a squeeze of lime juice
