  • 4 cups chicken stock (vegetable broth may be substituted)
  • 1 pinch saffron (crumbled, if saffron is not available, a 1/4 tsp. of turmeric can be used to give the couscous a nice color)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon freshly ground pepper
  • 1 tablespoon olive oil (more as needed)
  • 2 tablespoons butter
  • 2 cups butternut squash (cubed)
  • 2 cups zucchini (yellow or green)
  • 1/2 cup chopped onion
  • 8 ounces chickpeas (drained)
  • 10 ounces couscous (plain, I used Near East)
  • 1/4 cup golden raisins (plumped in 1 Tbsp. water)
  • 1/4 cup toasted sliced almonds
  • 2 fresh mint (chopped for garnish, optional)
