- 1/2 tsp. sea salt (plus more for the cooked couscous, if desired)
- 3 spring onions (small, & tops, chopped)
- 6 radishes (diced small)
- 1 pickling cucumber (small, or ½ English cucumber)
- 1 orange bell pepper (or medium size red, yellow, seeded and diced)
- 15 oz. chick peas (garbanzo beans drained and rinsed)
- 1 cup garden peas (frozen green)
- 2.25 oz. sliced black olives (drained)
- 2 Tbsp. fresh parsley (minced)
- fresh mint leaves (Several, minced)
- 5 lemons
- 1/3 cup olive oil
- 1 handful grape tomatoes (halved and reserved)
- 1/2 cup snow peas
- 1/2 cup green beans
- salad (Note: This, can be as colorful and as interesting as you make it)
