For a courgette which is mostly water to make such a flavourful soup is impressive! I used half the ingredients as it was just for myself and found that there was sufficient for 4 (generous) portions. I’ll definitely be making it again.

I only put in 1litre of veg stock and also added some chilli flakes. It was very tasty and made 5 good size portions
