- 1/4 cup water
- 1 Tbsp. onion (dried minced)
- 1 tsp. ground coriander
- 1/2 tsp. sweet paprika
- 1/4 tsp. ground cinnamon
- 1/4 tsp. cayenne
- 1/2 cup pine nuts (2 1/2-oz package)
- 1/4 cup dried apricots (chopped)
- 1/4 cup dried cranberries (chopped)
- 10 oz. couscous (about 1-2/3 cups)
- 2 leaves fresh parsley (chopped)

Directions
- In medium saucepan, bring all ingredients except couscous and parsley to boil over high heat. Stir in couscous; remove from heat. Cover and let stand 5 minutes; stir in parsley. Makes about 5 cups.
