5 eggs, 1/4 c oil, 1 1/2 c finely chopped onion, 3/4 c grated cheddar cheese, 4 sl cooked crumbled bacon, 2 3/4 c grated squeezed dry zucchini, 1 c flour, 1 1/2 tsp baking powder, 1/2 tsp salt. Beat eggs, add next 5 ingredients. Combine dry ingredients together, and to add to wet. Use mini-muffin tin (fill until almost full), makes 3.5 dozen. Bake at 350 for 30 mins.

Made them today and they came out great. Next time I'll probably add a little more spice but that's just because I'm one of those who loves Frank's Red Hot on everything. But a great base recipe nonetheless. I would recommend letting them cool in the pan before removing them.
