This was AWESOME! I took an 8 oz package of crimini mushrooms, sliced,then sauteed them in coconut aminos. I had made my own cottage cheese - which was less liquidy than those you find in the store. I used 1/2 cup of feta, a cup of frozen spinach, a cup of artichokes, sliced, no beans, but a bunch of cilantro and some fresh dill.

I have made these twice, and no matter how well I greased the muffin tin, they stuck. I even tried waiting until completely cool before removing, and they still stuck. I have made different variations with no issues, so I figure it's the cottage cheese.
