This was so easy to make. I don’t cook a lot but when I do I like to make something that looks as good as it taste. This is one of those recipes. The only thing I did different as I turned it up to 425 for the last 25 minutes so that it would brown better. The Pham loved it! I will definitely be making this again. Maybe even for Thanksgiving…

The hens themselves were tasty: nothing amazing, but not bad either.
The absolute worst part about this recipe is getting the birds smothered in the butter. no matter how much you pat dry the birds, the second the skin moves as your spreading the coating, the coating no longer spreads. this made the whole process upsettingly not fun. it took as much time to coat the birds as it took to cook them.
i enjoy a good cooking challenge-this was just NOT fun.
