- 1/2 tsp. mustard seeds
- 1 pinch ground cloves
- 2 Tbsp. saltpeter (to preserve red color of meat; optional)
- 1/2 tsp. mustard seeds
- 1/2 tsp. whole allspice
- 1/4 tsp. whole cloves
- 4 garlic cloves (sliced)
- water (to come up 3/4 to side of brisket)
