- 1 medium onion (diced)
- 2 bell peppers (diced-assorted colors make it pretty, poblano works well too)
- 8 oz. sharp cheddar cheese (chunked or shredded white, We like Cabot.)
- 1/2 stick butter
- 1/2 pepper
- salt
- 8 eggs (optional-eggs cooked to your liking. I prefer over easy)
