- 3/4 lb. andouille sausage (sliced into 1/4 inch pieces)
- 1 sweet onion (Medium, chopped)
- 2 celery stalks (chopped)

- 2 garlic cloves (finely chopped)
- 2 Tbsp. chopped fresh sage (finely)
