- 15 oz. black beans (drained and rinsed)
- 1 poblano (large)
- 2 tsp. oil
- 2 grated Monterey Jack cheese (generous cups, about 8 ounces coarsely)
- 2 cheddar cheese (generous cups, about 8 ounces coarsely grated)
- 12 oz. tortilla chips (the thicker the better)
- jalapeno (Thinly sliced, 1 used 1/2 a big one)
- radishes (Thinly sliced, I used 2 medium)
- 1/2 white onion (minced, you can toss it with a little lime juice and salt to lightly pickle it, if desired)
- 1 handful fresh cilantro (roughly chopped)
- diced tomatoes
- shredded lettuce
- avocado (Sliced)
- lime wedges
- hot sauce
