- 2 Tbsp. Crisco Butter Flavor All-Vegetable Shortening
- 3 cups corn kernels (fresh or frozen and thawed)
- 1/2 tsp. paprika
- 1/2 tsp. salt
- 1/4 tsp. cayenne pepper
- 1/4 tsp. pepper
- 2 Tbsp. chopped fresh cilantro
- 1 Tbsp. fresh lime juice
- 1 tsp. grated lime peel (finely)
- 1/2 cup queso fresco (crumbled)

Directions
- HEAT shortening in large skillet over medium heat. Add corn and stir-fry 2 minutes.
- STIR in paprika, salt, cayenne pepper and pepper. Remove from heat. Just before serving stir in cilantro, lime juice and lime peel. Top with cheese.
