This dish is delicious every time, with almost any variation. Don’t have Pinot Noir? No problem-any full bodied red wine will do. No leek or shallot? No worries- an onion works just fine. Chicken breast, thighs,or drums, bone in or boneless, it’s all good. Season well, braise for 2 or 3 hours, and serve over your preferred starch- creamy mashed taters, wide egg noodles, riced cauliflower or my favorite, polenta. Add a nice bottle of wine and you’ve got a gourmet, restaurant quality meal that will impress friends, family, or that special someone.

It was a big hit, although I don’t like mushrooms so I only bought 10 instead of a pound.
