Made it vegetarian with vegan cheese, vegan Sour cream and soy protein crumbles from Morningstar farms with taco powder. Made with lettuce tomato and avocado. The consistency of the soft taco with the crunchy shell is really nice. It was a little bland so I threw in some homemade mayo chipotle sauce. Just mix half cup of mayo with chipotle powder and chili powder and smoked paprika and lime. So good!
