- 2 Tbsp. grapeseed oil (or other neutral, high-heat oil)
- 1/4 tsp. cumin seeds (lightly toasted)
- 1 tsp. coriander seeds (lightly toasted)
- 1/4 tsp. black peppercorns (lightly toasted)
- 1/2 Tbsp. dried oregano leaves
- 1 tsp. coconut sugar (or other sugar)
- 1 poblano pepper (medium)
- 2 Tbsp. chipotle peppers in adobo sauce (chopped)
- 2 Tbsp. adobo sauce (additional)
- 1/2 cup water (or low-sodium vegetable broth divided)
- 1/2 yellow onion (or white, finely chopped)
- 3 cloves garlic (minced)
- 1/2 Tbsp. tomato paste
- 2 Tbsp. low sodium soy sauce (or tamari)
- 1 Tbsp. cider vinegar
- 1 tsp. nutritional yeast (optional, for added umami)
- 1/4 tsp. salt (plus more to taste, I personally went up to almost 1/2 tsp.)

So delicious! My vegetarian mother and stubborn carnivore of a father both thought it was delicious. We also repurposed the sauce as a marinade for steak as it was too delicious to waste the leftovers. Will be making again

I've made this a couple times. it's super tasty. A tip for getting the water out of tofu: freeze it. once it thaws is easy to squeeze the water out.
To prep this recipe ahead, you can make the spice mix, blend the sauce, and fry the tofu a day in advance then throw it all together and heat it up.

Delicious. I prefer sofritas burrito to one with meat. My husband and I are cutting down on red meat, and this is an excellent alternative.
