- 1/4 cup almond butter (I used a roasted + salted one)
- 1 Tbsp. gluten (free tamari)
- 1 Tbsp. fresh lime juice (reserve zest for salad ingredients below)
- 1 tsp. agave nectar
- 1/2 tsp. chili flakes
- 1/4 cup water (filtered)
- 1/2 pkg. brown rice noodles (/spaghetti etc., about 6 ounces)
- 1 zucchini
- 1/2 cup fresh peas (shelled)
- 1 handful snap peas (fresh)
- 3 handfuls watercress (fresh, or baby arugula, sliced kale, baby mustard greens etc.)
- 2 Tbsp. thai basil (chopped, or regular basil)
- 1 green onions (sliced)
- 2 peaches (medium)
- 2 tsp. coconut oil
- 1/2 pkg. tofu (firm organic, patted dry, about 8 ounces/227 grams)
- 1 pinch chili flakes
- 1 tsp. lime zest
- 1 Tbsp. sesame seeds
- 3 Tbsp. raw almonds (chopped)

I made this today for a Sunday Cookout! I am Vegan, so I used Zucchini Noodles. I marinated them in 2Tbsp Lemon Juice & S & P in the fridge for about 20 minutes. I learned this little trick recently, the process helps make the Zoodles a bit softer. And they taste super fresh too!
I used Peanut Butter as well, as I didn't have Almond, and the flavor was fantastic!
Opted out of the Red Pepper and the Tofu, (they don't agree with me too much, even tho I LOVE them both!)
I will return to this recipe again and again! It's so fresh. This tasty little treat definitely pleased the pallets of our guests!

Was excellent! huge hit. however, I added a tsp of soy sauce to the sauce, also used peanut butter instead of almond because thats all I had. It turned out very authentic tasting, will definitely be making this salad again!
