Description
This surimi salad came about from trying to reproduce my mother's surimi salad and branching out from it since I just added more veggies that I like. It's easy, fast and a nice surprise for your palate on a hot day.
Ingredients

- 1 cucumber (large)
- 2 stalks celery
- 1 handful fresh cilantro
- 1/2 lime
- 5 leaves lettuce (any that you like)
- 10 surimi (leg-style sticks)
- 1 tsp. black pepper
- 2 1/4 Tbsp. light mayo

- dice the cucumber and celery
- thinly chop the cilantro and the lettuce
- slice the surimi thinly lengthwise

I was looking for a simple salad to use surimi and this fit the bill. I did modify this recipe by adding old bay seasoning and putting it on a bed of lettuce, rather than mixing the lettuce into the salad. I loved that it uses minimal mayonnaise so that my salad isn’t swimming in mayonnaise.
