Excellent tips even if you use a different method. The cutting board in the 1/2 sheet baking pan is my favorite.

So easy to do. Searing the roast at 500 degrees for 20 minutes is the secret to a deliciously moist and tender and juicy cut of meat. However, the smoke from the heat in the oven did set off my smoke alarms throughout the house. Nonetheless, this was the very best roast I have ever prepared.
