With chocolate centers, white chocolate shells, and a sprinkling of cookie crumbs on top, these cake pops are better than eating a plain old cookie any day!

  • 1/4 cup canola oil
  • 1 large egg
  • 6 tablespoons coffee
  • 2 tablespoons sour cream (or yogurt)
  • 6 tablespoons buttermilk
  • 1/2 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 6 tablespoons cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt (scant)
  • 6 ounces vanilla frosting (about 2/3 cup)
  • 2 ounces white chocolate bar (1/3 cup, for cake pop sticks, finely chopped)
  • 12 ounces white chocolate bar (2 cups, for coating, finely chopped)
  • 1 tablespoon coconut oil
  • 6 chocolate sandwich cookies (with vanilla cream filling, optional, for decoration)

    The whole family enjoyed this recipe. The cake is a deep, rich chocolate which stands up nicely to the sweet white chocolate. I made the cake portion and let it cool in the fridge overnight. NOTE: I had a brain fart and used ground coffee instead of prepared. I had to toss my first cake. 😂
