Preheat the oven to 350°F.

Measure 6 Tbs. (75g) of granulated sugar into a small bowl. Set aside.

Place the softened butter and 2 Tbs. (25 g) granulated sugar into a large bowl. Use a mixer with a whisk attachment to mix the butter and sugar on medium speed for 1 minute, until the mixture is pale and fluffy.

Add the egg. Continue to beat on medium speed for 30 seconds to 1 minute until light and fluffy.

Turn the mixer to low speed, and add the flour and baking soda to the bowl. Mix for about 1 minute to combine ingredients into a firm dough.

Form the cookie dough into about 20 balls, rolling each cookie in the bowl of granulated sugar before placing on baking sheet.

Insert baking sheets into oven and bake the cookies for 2 minutes.

Remove the baking sheets from the oven when cookies are slightly golden-brown on the edges and puffy on top.

Allow cookies to cool for 5 minutes on sheets, then transfer to cooling racks. Serve and enjoy. Store leftovers in an airtight container at room temperature for 3 days, or in the refrigerator for 5 days.
