- 1/2 onion (medium, finely diced)
- 1 poblano pepper (finely diced - you can substitute bell pepper)
- 4 Tbsp. Equal
- 4 Tbsp. all purpose flour
- 2 cups whole milk (i wouldn't recommend skim for this recipe)

- 6 large eggs
- 1/2 cup milk
- 2 Tbsp. melted butter
- 1/4 tsp. salt (and pepper)
- 1 1/2 cups sharp cheddar cheese
- 2 cans biscuits (refrigerated butermilk, 7.5 oz each)
