  • 1/2 teaspoon cayenne pepper (use less if you're sensitive to spice)
  • 28 ounces diced tomatoes (in tomato juice, don't drain!)
  • 8 ounces tomato puree
  • 15 ounces kidney beans (cans, rinsed and drained)
  • 15 ounces pinto beans (cans, rinsed and drained)
  • 1 cup vegetable broth
  • 3/4 cup frozen corn
  • 1/4 cup fresh lime juice

    Delicious! Perfect with rice and some avocado on top. Super easy meal for busy people, I left my slow cooker on while I went to work and came home to a delicious dinner. Great for freezing too

    Super tasty! We both decided that we just don't like pinto beans though, so I now use 1 can each black beans, kidney beans, and cannelini or navy beans. I've also used peas instead of corn based on what's in my freezer.
