- 1/2 cup celery (finely chopped)
- 1 carrot (diced)
- 1 yellow onion (large, diced)
- 1 green bell pepper (or red, seeds and ribs removed, diced)
- 1 jalapeño chilies (seeds and ribs removed, minced)
- 3 cloves garlic (minced)
- 2 Tbsp. chili powder
- 1 1/2 tsp. ground cumin
- 1 tsp. italian seasoning
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1/2 tsp. cayenne pepper (use less if you're sensitive to spice)
- 28 oz. diced tomatoes (in tomato juice, don't drain!)
- 8 oz. tomato purée
- 15 oz. kidney beans (cans, rinsed and drained)
- 15 oz. pinto beans (cans, rinsed and drained)
- 1 cup vegetable broth
- 3/4 cup frozen corn
- 1/4 cup fresh lime juice
- cilantro (or parsley, chopped, for garnish, optional)
- sour cream (for garnish, optional)
- cheese (grated, for garnish, optional)

Delicious! Perfect with rice and some avocado on top. Super easy meal for busy people, I left my slow cooker on while I went to work and came home to a delicious dinner. Great for freezing too

Super tasty! We both decided that we just don't like pinto beans though, so I now use 1 can each black beans, kidney beans, and cannelini or navy beans. I've also used peas instead of corn based on what's in my freezer.
