- 2 tsp. coarse sea salt (or kosher, divided)
- 3 lb. chicken (cut into 8 serving pieces, wings removed for later use and breasts cut in half)
- vegetable oil (for cooking the chicken)
- 2 cups chicken broth
- 3 oz. mexican chocolate (broken into pieces)
- 1 lb. chayote squash (peeled and sliced into 1-inch strips)
- 1 lb. green beans (trimmed and cut into 1-inch pieces)
- tortillas (or rice to serve)
