- 1/2 cup shredded carrots
- 1 cup chickpeas (Garbanzo Beans)
- 1/2 cup olive oil (or neutral tasting oil such as canola)
- 3 Tbsp. red wine vinegar
- 2 cloves garlic (or 1/2 teaspoon Garlic Powder)
- 1/2 tsp. Dijon mustard
- 1 tsp. dried oregano
- 1/2 tsp. dried basil leaves
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. fresh lemon juice (optional)

I made it in a hurry for my wife and her coworkers. Everyone enjoyed it. I omitted the chickpeas and forgot to add the Dijon mustard. It was still delicious!

I loved it! In place of the chicken I added pecan, and I left out the cheese and added apple because I am vegan. I love change your veggie and add different one if you like. Instead of romaine, I used spinach once. And dressing is so, so good.

Add coconut shavings and replace wine vinegar for passion fruit juice. It will transport you to heaven or GYE, Ecuador.

Modified it with a Caribbean flavor, using mangoes, substituted the basil and oregano with cilantro and pimentos
