  • 1 avocado (sliced)
  • 1 cup cherry tomatoes (red or yellow)
  • 1 cucumber (sliced)
  • 1 1/4 cups feta cheese (crumbled)
  • 1/4 cup red onion (sliced)
  • 1 cup yellow peppers (Red, Orange, diced)
  • 1/2 cup shredded carrots
  • 1 cup garbanzo beans (Chickpeas)
  • Greek dressing
  • 1/2 cup olive oil (or neutral tasting oil such as canola)
  • 3 tablespoons red wine vinegar
  • 2 cloves garlic (or ½ teaspoon Garlic Powder)
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil (or fresh basil leaves)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon fresh lemon juice (optional)

    I loved it! In place of the chicken I added pecan, and I left out the cheese and added apple because I am vegan. I love change your veggie and add different one if you like. Instead of romaine, I used spinach once. And dressing is so, so good.

    Add coconut shavings and replace wine vinegar for passion fruit juice. It will transport you to heaven or GYE, Ecuador.

    Modified it with a Caribbean flavor, using mangoes, substituted the basil and oregano with cilantro and pimentos
