The tuna mixture includes tons of tantalizing ingredients for a powerful palate pleasing punch. All this is mixed and put into bread for a meal that is like a sandwich, but can be eaten with a fork.

- 8 slices bread
- 2 Tbsp. low-fat mayonnaise
- 1 Tbsp. mustard
- 1/4 cup bell peppers (canned, sliced)
- chipotle chili (to taste)
- 1 Tbsp. pickle brine
- salt
- ground black pepper
- 284 grams canned tuna
- 1 carrot (peeled and diced)
- 1/4 cup pickles (finely chopped)
- 1/2 cup sour cream
- olives
- chili (jalapeño, in strips)

Directions
- Remove the bread crusts.
- Using a food processor, mix the mayonnaise, mustard, bell peppers, chipotle, brine, and salt and pepper to taste.
- Mix with the tuna, carrot, and pickles.
- In square baking pan, place 4 slices of bread. Add the tuna and cover with the other 4 slices of bread.
- Spread the sour cream on top, then add salt as needed. Garnish with olives or chili.
