- 1 lb. green beans
- 3 oz. pancetta (uncooked)
- 2 Tbsp. extra-virgin olive oil
- 1 tsp. red wine vinegar
- 1 Tbsp. sliced shallots (thinly sliced)
- 1 pinch fine sea salt
- 1 pinch black pepper

Directions
- Wash and trim the ends of the green beans. Blanch and set aside.
- In a lightly-greased frying pan, cook the pancetta on medium-high for 5 minutes, or until crispy. Spoon pancetta onto a paper towel to absorb excess grease.
- In a large mixing bowl, toss the beans together with the olive oil, vinegar, shallots, salt, pepper, and pancetta. Serve room temperature or chill to serve cold.
