- 8 oz. chicken (cooked, shredded, FOR STOVE TOP VERSION, rotisserie chicken is great)
- 3/4 lb. chicken breasts (FOR INSTANT POT VERSION)
- 1 cup pearl couscous
- 1/2 lemon

- chopped fresh parsley (for garnish, optional)

I loved it! Definitely agree with being generous with your Ginger amounts, as well as adding more broth so it's more soupy. I added a total of 6 cups of broth.

Delicious! Be sure to cut lemon grass really fine though. I also added 2 cups more of chicken broth for a more brothy soup, along with a whole lemon

Really good. I used Bob's Red Mill tri-colored couscous and red onion which made it even prettier.

This is really delicious but improved (for me) with a lot more ginger. Have made this a lot and continue to do so.
