Description

Coffee, chocolate chips and ricotta make their way into this otherwise basic coffee cake dough. Whipped egg whites help to keep it airy and light. Baked in a ring pan until tender and golden, it's the perfecrt way to start the morning. Don't have a ring pan? You can also use a 13" x 9" baking pan, in which case it'll take about 40 minutes to cook. Store it covered for up to three days, serving it either warm or at room temperature when the mood strikes.
