This was heavenly! I wanted to see if it’s something I would like to make for Christmas. Definitely!

I used Batangas Kapeng Barako, omitted the nuts, changed white sugar to brown sugar; it was done for 50 mins in the oven. I used a bainè mariè (pan filled with water) inside the oven, which resulted to moist bread.

Turned out perfect! Made a few adjustments according to taste:
Reduced sugar to 1/2 cup, salt to 1/2 tsp and added 1 tsp cacao powder. It was more than sweet enough! Toasted 1/2 cup pecans lightly. Subbed 1/2 of WW flour for AP flour. Added 1 tb rum for flavor. Baked for 30 min using mini loaf pans.
Next time will further reduce sugar to 2 to 3 Tb of coconut nectar and heaping 1 tb yogurt for moisture.
