- Grill the cod fillets in an ovenproof dish for 6-8 minutes.
- While the cod is cooking, mix the garlic and mayonnaise together.
- Then mix up the chopped tomatoes, coriander, shallot, chilli, oil and vinegar.
- Serve the lightly grilled cod with the garlic mayonnaise and salsa.
