- fish (The head and bones of a large fleshy, cod, hake, rock fish would all be fine)
- 2 carrots
- 2 leeks
- 1 bulb fennel
- 1 stick celery (large)
- 1 handful parsley (including stalks)
- 4 whole peppercorns
- 2 bay leaves
- 1 glass white wine (if you have any leftovers!)
- 1 filet (large, cod, cut into generous chunks and dusted with a little plain flour, salt and pepper)
- 2 liters stock (well seasoned)
- 300 grams king prawns (frozen)
- 1 onion (sliced medium)
- fennel bulb (The rest of the, sliced)
- 1 stick celery (large, finely chopped)
- 1 leek (cut into discs)
- 2 medium potatoes (peeled and sliced)
- 50 mL creme fraiche
- 1/2 lemon (Juice of)
- salt
- pepper (good quality stock powder if extra flavour needed)
- fresh parsley (Chopped, to garnish., optional)
- freshly grated Parmesan (A sprinkle of, to serve.)
