Description
Cutting up a whole chicken yourself is a much more economical way to go than buying the separated pieces, and simple enough to do. Here, the chicken is cut into pieces and browned in a little butter, and then combined with sauteed bacon and shallots, saffron, and toasted almonds and cooked until tender through and through and deeply flavorful. A simple salad and cooked rice rounds out the meal nicely.

- 1 chicken (countryside)
- 12 spring onions
- 4 slices bacon
- 1 cup toasted almonds
- 1 tsp. saffron
- salt
- pepper
- 1 Tbsp. butter

Directions
- Clean and cut the chicken into pieces and place it in a saucepan with the butter to brown a little. Cover and leave to cook.
- Cut the bacon into squares and sauté in a frying pan. Add to the chicken.
- Also sauté the shallots in a little olive oil and add to the chicken. Season with salt, pepper and saffron. Add the almonds and cook for 20 minutes over low heat, stirring occasionally.
- Serve with white rice and green salad.
