Description

These portuguese tarts feature the sweet nuttiness of coconut. Made with corn flour, these tarts are gluten free. Preparation is made easy with the help of a food processor. Condensed milk makes these tarts gooey and light.

Ingredients

  • 1 can sweetened condensed milk
  • 300 milliliters milk
  • 1 tablespoon butter (at room temperature)
  • 3 eggs
  • 1 tablespoon cornstarch
  • 100 grams grated coconut

    Directions

    1. Preheat the oven to 180 degrees Celsius.
    2. Prepare cupcake pans with paper liners. You don't need to grease them.
    3. Put all the ingredients, except coconut, in a food processor and whisk for about 30 seconds. Add the coconut, and mix for a few seconds.

    These have a nice flavour and texture. However, do not try to make these without using muffin liners, even if use use lots of oil in the pan, as they will stick and break apart when you try to remove them. I also found that the batter was so liquidy is was difficult to get the coconut evenly dispersed.

    These were very easy to make. They turned out light creamy and custardy like a Portuguese tart. I ate the whole batch warm so back to making more!
