Unbeknownest to me I only had 1 egg!! So, I used 1/4 cup of unsweetened Almond milk in place of not having the 2nd egg. Also, I didn't have "liquid stevia" but I used 6 packs of Splenda Stevia. After mixing the batter I made round balls, pressed them & detail the top with fork markings. I baked them at 350 degrees in my Chefman Air Fryer placing the dough on top of parchment paper. I baked them until brown and turned them over to brown on the other side (about 7 mins or to your taste). I expected the cookies to be crunchy cookies but they were soft. Althought I love crunchy cookies, these were good despite my lack of an egg. This made about 8 small cookies and I ate every last one! Lol, I had unsweetened Almond milk on the side. By the way, I used Great Value Organic Coconut flour, a Walmart brand and I topped a few cookies with Strawberry Jam by Smuckers. Not bad.
