- 14 oz. lite coconut milk
- 1 cup water
- 1 sweet potato (cubed)
- 1 butternut squash (small, chopped)
- 1 head cauliflower (chopped, either 1/2 of a medium-large cauliflower or 1 whole small cauliflower)
- 2 Tbsp. coconut oil (melted)
- 2 Tbsp. extra virgin olive oil (I love basil or garlic olive oil, regular extra virigin olive oil works well, too)
- salt
- pepper
