Yum, yum, yum! I love rhubarb and I love coconut! So this was a lovely twist on an old favourite. I’ve made it twice now. First time I used my 8x8 pan and found the topping too thick (and that’s saying something because I LOVE topping!). Second time I used a different pan that is a weird 8x11 oblong and it was perfect thickness.
