    The muffins were very tasty and moist. The sweetness is just right. I had to use sweetened coconut flakes since I couldn't find unsweetened flakes at the store, but the sweetness is still just right. Great for breakfast or for dessert if you like coconut flavor. I also used coconut oil instead of canola oil and doubled the recipe to make larger muffins instead of mini ones.
