They were good, but I won’t do the oil next time. They were too oily between the coconut milk and oil. I cooked them on an electric skillet so no extra spray or oil was needed.

Husband asked me to save this recipe to make again. Crispy outside, soft center, delicious, subtle coconut flavor. Yum.
