    Teresa, there is 3 tablespoons of coconut protein listed in the ingredient section of the recipe.. Coconut protein is obtained from the minced coconut cake after the extraction of oil from the coconut flour according to a question asked by another reader.

    Not sure where the protein is coming from, was it mistakenly left out of the recipe?
