Made these on a rainy Thursday morning for a brunch. At the end I folded in dried cherries and slivered almonds. They smell great in the oven and taste even better.

LOVE, LOVE, LOVE this recipe. Finally coconut muffins that aren't extremely soggy! Has the perfect texture! I added blueberries to mine and they were delicious!
