- 5 large shrimp (100 grams, *see footnote 1, optional)
- 1 Tbsp. butter
- 1 tsp. minced ginger
- 300 grams onion (sliced)
- 2 Tbsp. Madras curry powder (mild, or your preferred curry powder / paste)
- 270 mL low fat coconut milk (or full fat if you prefer)
- 2 tsp. light soy sauce (or 1 teaspoon fish sauce)
- 2 cups green beans (chopped)
- 2 cups white mushrooms
- 40 grams carrot (sliced)
- 2 Tbsp. oyster sauce
- 1/2 tsp. salt (or to taste)
- 1 handful fresh cilantro (for garnish, optional)
- steamed white rice (or naan bread to serve with)
