  • 250 grams lentils
  • 400 milliliters coconut milk
  • fresh curry leaves (or dried)
  • 1 tomato (large, chopped)
  • 1 onion (chopped)
  • 1 teaspoon turmeric
  • 2 green chili peppers (optional)
  • 500 milliliters chicken stock
  • fresh coriander (or curry leaves to garnish, optional)

    Directions

    1. If using dried curry leaves, place in boiling water for 2–3 minutes. Once rehydrated, dry the leaves and set aside.
    2. In a heavy based pan, place the lentils, coconut milk, 2 curry leaves, onion, tomato, and turmeric.
    3. Cover with 300 milliliters of stock and bring to the boil.
