It was really yummy. I did add 1/2 tbps extra curry powder and some chili powder for extra kick and served over cauliflower rice. I didn’t have coconut aminos, so I also used 2 tsp of fish sauce instead of one (some Vietnamese brand dish sauce have no added sugar, unlike Thai ones)
